The Original St. Patrick
Contrary to the original belief of the saint being Irish, St. Patrick was actually a British man born to Roman parents. He had a rough adulthood when he was kidnapped by Irish pirates and forced into slavery! His complicated past brought him closer to his Christian faith, leading him to become one of the first people to bring this religion to Ireland around the year 432.
In the states, St. Augustine claims the first St. Patrick’s Day celebration, which took place about 422 years ago! The first parade brought together a blend of Spaniards, Africans, Native Americans, Portuguese, a French surgeon, a German fifer, and at least two Irishmen who marched together to celebrate and honor the Irish saint.
Today, hundreds of Americans gather to celebrate this holiday by visiting pubs and taverns, gathering with friends, joining parades, and even dyeing our rivers green!
The Perfect St. Patty Pineapple Punch
In its early beginnings, St. Patrick’s Day was considered a dry holiday because of its religious purpose. Until the 1970s, all pubs in Ireland were closed until vendors realized they could attract tourists by celebrating the day.
Now that history has changed and the holiday is no longer dry, it’s your turn to impress your guests with this delicious St. Patrick’s pineapple coconut rum punch!
Ingredients:
- – 2 cups Chestnut Hill Farms Perfect Pineapple Juice (freshly squeezed, trust us – It’s better!)
- – 3 cups sparkling water
- – 1/4 cup ginger syrup
- – 2 limes (1 for juice, 1 for garnish)
- – Fresh mint leaves
- – Edible gold dust (for garnish)
- – Ice cubes
- – 1 cup coconut rum (adjust to taste)
Instructions:
Prepare the Pineapple Base:
- Cut and juice the fresh Chestnut Hill Farms pineapples for about 2 cups of pineapple juice.
- Filter the juice using a strainer for smoother results.
Create the Punch Mix:
- Combine the pineapple juice with 3 cups of sparkling water in a large mixing bowl or pitcher.
- Squeeze the juice of one lime into the mix.
- Add 1/4 cup of ginger syrup for a bright flavor.
- Pour in 1 cup of coconut rum for a slight kick.
Blend and Chill:
- Stir the ingredients until well combined.
- Place the punch in the refrigerator for at least 30 minutes, allowing the flavors to combine and the punch to chill.
Prepare Garnishes:
- Slice the second lime into thin circles for decoration.
- Place fresh mint leaves for some greenery (we don’t want to get pinched!)
Serve and Enjoy:
- Once chilled, fill the glasses with ice cubes.
- Pour the Pineapple Punch over the ice, leaving some space at the top for garnishes.
- Top each glass with a lime slice, mint leaves, and a sprinkle of edible gold dust to give it its golden touch.
