If you want to add more flavor to this recipe, consider adding creamy risotto as a complimentary side dish. This dish pairs well with Mahi Mahi: the tropical flavors of pineapple salsa are enhanced by the plain-tasting, smooth, parmesan-flavored rice.   

Ingredients

For the Mahi Mahi:

  • 4 Mahi Mahi fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 lime, for juicing

For the Pineapple Salsa:

  • 1 cup diced pineapple
  • 1 small red onion, finely chopped
  • 1 jalapeno, seeded and finely chopped. Adjust this to your own tastes. 
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste

This recipe will come out to four servings.  

Grilled Mahi with Pineapple Recipe

  1. Start by preparing the pineapple salsa. In a medium bowl, combine the diced pineapple, red onion, jalapeno, and cilantro. 
  2. Squeeze the lime juice over the mixture and season with salt. Stir well to combine. 
  3. Let the salsa sit to allow the flavors to meld together. It’s time to grill the fish now.
  4. Preheat your grill to medium-high heat.
  5. Brush both sides of the Mahi Mahi filets with olive oil and season with salt and pepper. Squeeze some lime juice over the filets.
  6. Place the filets on the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and easily flakes with a fork. The cooking time may vary depending on the thickness of the filets.
  7. Remove the fish from the grill and let it rest for a few minutes.
  8. Place the grilled Mahi Mahi on plates. 
  9. Spoon a generous amount of pineapple salsa over each filet. Garnish with additional cilantro or lime wedges if desired.
